I really want to advance my education, whether it’s by getting my Master’s degree or getting an undergrad degree in a different area. However, since I work full time it’s hard to fit in a class schedule. So, I’m thinking about checking out one of the online college degree programs that are offered. Surely that would be more manageable than trying to get to a physical building every day.

Working on the Weight

I think the working out I’ve been doing has been starting to work. I’ve also been watching what I eat even more closely (though I really don’t eat badly to begin with), and while I haven’t replaced the battery in my scale at home, the last time I went to my rheumatologist I was down somewhere in the 4-5 pound range, which definitely made me feel good.

I haven’t worked out in about a week or so, though. Taking care of Joe and Lucy was so tiring, I just didn’t have the energy! Plus, I didn’t really have the time. I was a busy woman!

My plan is to start back with it now. I just hate that it’s so slow to get the weight off. I’m so tempted to add diet pills to my regime to speed it up a bit. I guess I’ll just have to be patient.

One thing I’m glad I don’t own is an RV. Sure, it would be fun to be able to take off on a trip and have a built-in motel, but RVs are expensive to maintain between gas and maintenance. Plus, then I’d have to look around for rv insurance quote, which is just a big pain. I already have to do that for two vehicles. I’d hate to add a third!

This week’s theme is what you make. I make greeting cards. I actually haven’t had much time to work on them and promote my business since my pregnancy and Lucy’s birth, but I’m hoping to get back into it now.

Recipe Contest

I love Mexican food. One of our favorite dinners is enchiladas because it is so easy to make, so filling and so good. And, we always have leftovers for lunch. My favorite tortillas to use are Mission tortillas. I’ve never had any problems with them tearing, and they come in three different sizes, so I use them for enchiladas, soft tacos and double decker tacos. I just love making Mexican food!
