Homemade Lentil Soup

I love soup, and this year, my goal is to whip up some batches of soup this winter for some good, savory, homemade meals. I have a vegetable soup recipe that I love, and yesterday, I made a pot of lentil soup.

Boy, was it good! I am a huge fan of lentil soup, and this is a winner. It is really simple to make, only takes about an hour or so to cook. I chopped up an onion and two celery stalks, and then put those in my pot with half a 1-pound bag of frozen carrots. After cooking the veggies down, I added the lentils, water, vegetable broth and spices. Then, I left it to cook for about an hour.


The reason I mixed water and vegetable broth was because I only had enough broth for four cups. Next time, I will probably use all vegetable broth just because I prefer it to water. In any case, this soup was SO good!


This recipe made a ton of soup, so I have a lot of leftovers, which is what I had hoped for. I know what I’ll be having for lunches this week!

1 onion
2 celery stalks
1/2 small bag frozen carrots
2 cups lentils
4 cups water
4 cups vegetable broth
1 can diced or crushed tomatoes
1 tsp. dried basil
1 tsp. dried oregano
2 cloves garlic, minced
1/4 cup olive oil

1. Chop onion and celery, and saute in olive oil with carrots.
2. When onions are tender, add garlic, basil and oregano and cook for 2 minutes.
3. Stir in lentils, and add water, vegetable broth and tomatoes. Bring to boil, then reduce heat and simmer for at least 1 hour.

A Trip to the Food Truck Park

Food trucks are a new trend here in Atlanta, and a Food Truck Park recently opened. Every time we would drive through Atlanta, we would see it and talk about how we wanted to try it out.

A couple of weeks ago, we got our chance! Joe surprised me by taking a day off work and planning a trip to the Food Truck Park for lunch! He had checked out the park’s website beforehand and discovered that they had a good selection of vegetarian foods for me. I was so excited!

It was fun wandering around, trying to decide what we wanted to eat. There really was a good vegetarian selection (including one completely vegan truck), and I ended up with a burrito bowl.


Joe had a crab cake sandwich.


And, Lucy got peanut butter and jelly.


We managed to find an empty bench where we could eat. It was pretty busy, especially considering we had arrived fairly early.


For dessert, we got cupcakes! Yum! It was such a fun trip, and we can’t wait to go back and try new menu items!

Sometimes I think it would be fun to have an ATV. But, then I think of the dangers and having to buy not only the ATV but also buy atv winch and other accessories, and I think, eh, it’s really probably not worth it. Maybe my in-laws will get one to use on their new, undeveloped property. Then we can all partake in the fun! 🙂

Wordless Wednesday: Lucy Riding her “Elephant”


Rise Up!

This month, we took Lucy to her first professional football game. And, it was MY first football game as well! I was psyched. We had tickets (that were FREE, I might add!) in the end zone in the 11th row. Seriously. We had awesome seats.

The Falcons were playing the Ravens, my hometown team. I didn’t know who to cheer for! I ended up rooting for the Falcons, but I will say that I LOVED hearing the few Ravens fans in attendance shout the “O” during the National Anthem. It’s something that’s always done at Orioles games.

When the Falcons run out, they shoot off fireworks. Lucy LOVED that.



We stayed until the third quarter, and by then we had been there for more than two hours. I heard on the radio later that it took longer than normal to get through the first half. We were getting tired and, even though she didn’t want to leave, Lucy was tired as well. She had fun cheering and waving to the Falcon, though.


She also had a blast dancing and entertaining everyone sitting around us, though.





And, of course, I took a video of her dancing. The pictures don’t do her justice. You have to see this girl in action. You’re welcome.

It was only a pre-season game, but it was still a lot of fun. And, I know a regular season will have even more energy. We’re hoping to go to again this season, and we’ll probably leave Lucy at home so we can really focus and enjoy the game. I can’t wait!
