I know it’s actually Tuesday, but I thought I’d go ahead and post my menu for the week anyway. We usually end up deviating from it, especially if I end up getting home late from work, but at least it’s a guide.
Monday: frozen pizza
Tuesday: sloppy joe’s, salad
Wednesday: spaghetti, garlic bread, mixed veggies
Thursday: chili (yes, I know it’s ridiculously hot out, but we love chili. Plus, it makes good leftovers.)
Friday: pizza

What’s a sloppy joe? I’ve always wondered, hehe.
We usually cook enough for leftovers – so one cooked meal lasts for two nights. This week I made stirfried chicken & egg fried rice that was AMAZING. Tomorrow I’m going to have a go making veggie soup, but I need to visit the shop for a few ingredients first.. and then later this week I’ll be making a homemade lasagne which I’m dying to eat. YUM!
I’m wondering how you eat sloppy joe’s, being a vegetarian. Is there a vegetarian version? What about the chili? Do you just leave out the beef?
