I love Mexican food. One of our favorite dinners is enchiladas because it is so easy to make, so filling and so good. And, we always have leftovers for lunch. My favorite tortillas to use are Mission tortillas. I’ve never had any problems with them tearing, and they come in three different sizes, so I use them for enchiladas, soft tacos and double decker tacos. I just love making Mexican food!
Mission is hosting a . Entrants can submit budget-friendly recipes that use Mission tortillas. They have to be original and feed a family of five for $10. There are weekly prizes, as well as the chance to compete in a cook-off in Los Angeles and win a $10,000 kitchen makeover. The grand prize is ound-trip airfare and hotel accommodations for two to the Mission Menus Challenge cook-off on September 10, 2010 at the Hard Rock Café in Los Angeles.

What is your enchilada recipe? I’ve only tried making them once, but I didn’t care for them. It was made with cream of chicken soup. So, to me, it wasn’t a “real” enchilada.
