other bloggers share the food they eat, and i’ve decided to do the same. i made a yummy, healthy lunch today, and i thought i’d share for those of you who might want to try it. i usually eat either a peanut butter sandwich or a baked potato with mixed veggies for lunch. today, though, i took a meal that janet had made and adapted it. i picked up whole wheat tortillas last night (100 calories each!), and i sprinkled lime juice, chili powder and crushed red pepper on them and baked them. then i piled on some black beans, lettuce and pico, and voila, a filling, low-calorie lunch. the whole thing had only 330 calories and took only 10 minutes to make!
it’s a bad (camera phone) picture, but it still looks pretty yummy.

330 calories? Mexican food is supposed to have a minimum of 800 calories!! 🙂
Good for you for eating so healthy. You obviously have a palate for spicy stuff, which is reportedly very good for the immune system.
I’m so glad you were inspired! I looooooove Mexican food, and find it easy to make Mexican food healthy. There are endless variations on the taco salad, and it’s a great way to get in veggies and tons of flavor. You could add corn too. I’m actually suprised all of that was even above 300 cals!
