ok, i’m trying *again* with menu plan monday. hopefully i’ll stick with it each week this time. we stopped by a produce stand near my parents’ house yesterday and got some great veggies, so i’m incorporating those into our meals this week. monday: garlic and olive oil vermicelli, eggplant with marinara sauce, green beans tuesday: red potatoes, corn on the cob, broccoli and green beans — my mom used to make vegetable meals like this a lot in the summer, and i absolutely love them. wednesday: pasta, steamed squash and zucchini thursday: tacos, spanish rice friday: dinner at nana’s...
